The hospitality group behind Gold Coast’s popular modern Italian spot, Adalina, is bringing something new to Chicago’s vibrant Fulton Market neighborhood. Their latest project, Adalina Prime, is both ambitious and approachable, and is expected to open in summer 2025 on Green Street, a stretch that’s steadily growing into a key dining destination.

The restaurant promises a fresh approach to steakhouse dining, with flame-forward dishes, an all-day vibe, and a space built for both big nights out and low-key weekday stops.
Chef Soo Ahn, known from Top Chef Season 21 and Michelin-starred Band of Bohemia (2019), has officially been named Chef/Partner. His menu for Adalina Prime focuses on bold flavors and open-fire cooking, with dishes built around “steak, sea, and soil.” Vegetables will be flame-kissed, seafood will come with unexpected twists, and steaks will be plated with flair. Many dishes will be finished tableside to add a sense of play to the experience.
“At Adalina Prime, we want the experience to feel adventurous, indulgent, and inviting. Every seat will feel like the best seat in the house, and every dish a discovery—whether it’s a reimagined steakhouse classic or an unexpected new favorite. Our goal is simple: create extraordinary, lasting memories for every guest, every night. It’s what we do best,” said Chef Ahn.
The restaurant will be located at 360 N Green Street, within Sterling Bay’s new development. It will cover 10,500 square feet and will include a patio filled with greenery, a bright open-air atrium, and a two-story wine cellar. There will also be private dining and event spaces capable of accommodating between 20 and 200 guests. The exhibition kitchen will be visible from the dining area, enhancing the atmosphere during both lunch and dinner service.

The design comes from Dunne Kozlowski, the same studio behind the original Adalina. The look combines natural materials like wood and stone with velvets in jewel tones, marble surfaces, and gold accents. Soft lighting and layers of greenery give the room texture without overwhelming it, offering a balance between bold and relaxed.

The lunch menu is designed to be quick but polished, with an option to slow things down with a martini or two. Dinner brings more drama, with tableside finishes and shareable plates. The bar program features classic and experimental martinis, a wide range of cocktails, and a wine list that spans both Old World and modern producers. A lounge area near the bar gives guests the option to drop in for a drink or stay for a full meal.
As Fulton Market continues to evolve as one of Chicago’s most exciting neighborhoods, Adalina Prime is stepping in with the confidence, creativity, and consistency that defined Adalina. With a focus on hospitality, bold cooking, and elevated design, Adalina Prime isn’t trying to follow a formula, but build something new.
