Chef Guercio’s journey spans diverse culinary landscapes, from apprenticing at the Ritz Paris under Pastry Chef Eddie Benghanem to assuming roles in London, the Seychelles, Tokyo, and Russia.
This year, Lutetia Paris deviates from tradition with an intriguing twist on the classic Easter egg. Symbolizing the hotel’s dedication to a sustainable future and the preservation of endangered species, the eggs take the form of majestic humpback whales.
Crafted from a unique blend of chocolate devised exclusively by Chef Guercio and his team, the Great Humpback Whale Signature Egg boasts delicate flavors that tantalize the taste buds. Chef Guercio’s innovative approach includes incorporating dried sea lettuce leaves, naturally rich in iodine, into Oko 73% Peru unconfined dark chocolate. This infusion not only lends a distinctive texture but also imbues the chocolate with a nuanced flavor. Nestled within this chocolate sculptures – which costs €98 (approx $106) – lies a sumptuous heart of black sesame praline.
Then there is the trio of Baby Whales – three adorable round chocolate whales that will delight the whole family. The assortment – costing €42 (approx $45) – presents a selection of three enticing flavors which no child can resist – raspberry-infused chocolate; double shells of milk and white chocolate; and Illanka Grand Cru 63% dark chocolate.
